OMELETTE WITH SPICY SMASHED AVOCADO
This ridiculously easy two egg omelette with spicy smashed avocado is one of my go-to breakfasts. Pairing protein, fat and fibre like this will keep you fuller for longer and help to prevent your blood sugar levels from spiking, preventing cravings and energy slumps.
RECIPE
INGREDIENTS
Two eggs
Half an avocado
Green Tabasco
Knob of salted butter
Chilli flakes (optional)
METHOD
Beat the two eggs and add them to melted butter in a pan over a medium heat. Cook until almost set on top and then flip and turn off the heat. Use the residual heat to finish cooking through.
Meanwhile smash the avocado together with as much green Tabasco as you desire.
Pop the omelette onto a plate and top with the avocado and chilli flakes, if using.
