SPICY PRAWN AND TOMATO SPAGHETTI

Umm, summer?! Is that it?! The temperature might have plummeted today, but you can put some heat back into your Friday with this spicy tomato prawns with spaghetti (sweat-inducing levels of chilli totally optional)

Serves 2

Ingredients

180g prawns

120g spaghetti

2 garlic cloves, crushed

1/2 teaspoon paprika

1/2 teaspoon dried chilli flakes (or more, if you’re daring)

1/2 teaspoon dried oregano

60g sobrasada

250g passata

60ml red wine

Olive oil

S+P to taste

Method

Add as little olive oil as you dare to a heavy bottomed frying pan and fry the garlic and spices for two to three minutes on a low heat, being careful not to burn them. Add the sobrasada and let it melt down. Then add the wine and simmer until it’s reduced by half. Add the passata and keep the sauce on a low simmer.

Meanwhile, cook your spaghetti according to the packet instructions.

When your pasta is five minutes off being ready, add the prawns and oregano to the sauce.

Drain the pasta once it’s almost cooked and, important this, add the pasta to the sauce, not the other way round. Mix it all up and let the pasta finish cooking in the sauce for a minute or two, then take off the heat and serve. Nice with a simple green salad on the side.
