GOAT’S CHEESE AND NECTARINE SALAD

This recipe is a lovely salad that works well with grilled and barbecued meats. It’s a fruity little number (literally) and so refreshing on a hot day. I used to be super against fruit in savoury dishes but I’ve started to come round to it, are you for or against?!

You will need:

30g (three handfuls) watercress

100g soft goats cheese

Two ripe nectarines, sliced

150g raspberries

Olive oil

Method

Simple place the watercress on a serving plate, crumble the goats cheese over the top, and then add the nectarines and raspberries. Finish with a drizzle of good quality olive oil
