GRIDDLED CHICKEN WITH ZHOUG
This griddled chicken with zhoug is full of protein and greens, and also seriously quick to put together which is always a bonus! It’s zingy and fresh, and makes for a great spring evening supper. If you haven’t come across zhoug before, it’s a hot sauce from Yemen made with green chillis and coriander. If you like it spicy leave the seeds in the chillis, if you prefer a milder flavour then you can remove the seeds.
Ingredients
1 chicken breast per person, butterflied
1 bunch coriander
1 bunch parsley
1 garlic clove
2 green chillies
1 tsp ground cumin
Juice of 1/2 lemon
75ml olive oil
1/2 bunch rocket per person
Salt and pepper to taste
Method
Butterfly your chicken breasts, and season and oil with a little olive oil. Heat your griddle pan or frying pan (these would also be amazing on the barbecue) and cook the chicken (about five to eight minutes either side depending on size). While the chicken is cooking, make the zhoug simply by combining all the ingredients and blending. If you’re making the sauce ahead of time, leave the lemon juice out and add it just before serving.
To serve, place the rocket on each plate. Slice the chicken (making sure it’s cooked all the way through!) and add it on top of the rocket. Then drizzle over as much zhoug as you desire
